Grilled Chicken Quesadillas


Chicken quesadillas are a staple food in our household. They never get old. We make them at home and even order them when we go out. These were pretty easy to assemble on our camping trip and were an easy dish to feed a big crowd. However, I forgot to marinate the chicken before lunch - oops... so we ended up just pouring the marinade over the chicken. It still tasted great! I served it with a bean, rice and veggie salad.





Chicken Quesadillas


Ingredients:

Marinated chicken breast (recipe below)

Flour tortillas, large size

Shredded Cheese

Salsa

Chopped cilantro

For Dipping:

Sour cream

Salsa

Guacamole


Directions:

Heat grill to medium high and grill chicken until cooked through.


Once chicken is cooked, finely chop or shred. Lay out one tortilla and cover it with salsa. Spread chicken generously over one side of the tortilla, sprinkle with cheese and top with cilantro. Fold over the side without toppings and transfer to the grill. Heat until cheese is melted and tortilla is slightly crispy, turning once.


Slice into triangles and serve with salsa, sour cream and guacamole.


Chicken Marinade


1/3 cup lime juice
4 tbsp. vegetable oil
3 cloves garlic, minced or pressed
1 tbsp. Worcestershire sauce
1 tsp. sugar
1½ tbsp. minced fresh cilantro

½ tsp chili powder
1 tsp. salt
¾ tsp. pepper

1 lb of chicken breast


Combine and add chicken. Refrigerate for 15 – 20 min
