Today is my moms birthday – Happy Birthday Mum!
This is my mom when she was my age! And she is holding me when I was a baby :)
I would like to state for the record that I have the best mom ever. She is an amazing woman who raised 4 fabulous children ;) For her birthday I wanted to make her something special but I wasn’t quite sure what. Then I did some brainstorming and tried to think of things she might like – that’s when it hit me! Every time I think of butterscotch or see anything with butterscotch, I think of my mom. This is probably due to the fact that she always got a Butterscotch Dilly Bar from Dairy Queen every time we went :) I thought a blondie would be the best way to incorporate butterscotch chips so here it is:
Butterscotch Chip Blondies
Ingredients:
1-1/2 sticks) butter, softened
3/4 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
3 tablespoons milk
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1-3/4 cups (11-oz. pkg.) Butterscotch Chips
Directions:
Heat oven to 350°F. Grease 13x9x2-inch baking pan.
Melt butter in the microwave, let cool slightly. In the bowl of a stand mixer combine melted butter, brown sugar and granulated sugar. Beat until smooth. Add eggs, vanilla and milk; beat well. In a small bowl stir together flour, baking soda and salt. Gradually add to butter sugar mixture, beating until well blended. Stir in butterscotch chips. Pour into greased pan.
Bake 25 to 30 minutes or until top is golden brown and center is set. Cool completely in pan on wire rack. Cut into bars.
Makes about 36 bars
