Hey there! Long time no talk! Things have been busy 'round here - but the good kind of busy :)
This weekend we attended our friends Ross and Crystals wedding – It was a blast! I’ll have a recap later this week! I’ve also been working on my upcoming fall wine and cheese party that I’m we’ll be throwing in a couple weeks, I’m super excited for it!
Our DVR is back in action too with all of the fall seasons starting…in fact I am a little ashamed of how excited I was to have some of my favorite shows back on again and to check out some new ones! Glee, Criminal Minds, CSI, NCIS and New Girl and Whitney are pretty funny new additions :) But I think I am most excited for Dexter to start on Sunday!
Before making this green goddess dip, I had actually never tried it before. To be honest I was a little scared of the anchovies but decided just to go with it since they make Caesar dressing so yummy. I was pleasantly surprised! It was delightful with all the veggies I served it with, but crackers would also be great here. If you are looking to make this dip a little lighter I think that substituting Greek yogurt for the mayo would work well.
Green Goddess Dip
Ingredients:
1 clove garlic
2 to 3 oil packed anchovy fillets
1 tablespoon capers, drained
½ cup spinach leaves, washed and patted dry
2 scallions
¼ cup fresh parsley, plus more for garnish
2 sprigs fresh tarragon
¼ cup sour cream
¼ cup mayonnaise
¼ teaspoon fresh ground black pepper
Directions:
Place the garlic, anchovies, capers, spinach, scallions, parsley and tarragon in the bowl of a food processor or blender and process until smooth. Add sour cream and process again until smooth. Stir in mayonnaise and pepper until well combined.
Transfer to a serving bowl and garnish with parsley to serve immediately, or cover and refrigerate up to 1 week.
