This sorbet spritzer is a really easy and festive drink to entertain with. I made a peach Bellini sorbet over the summer and it was so yummy too. Using a pomegranate cranberry juice would make this very holiday appropriate and delicious for a holiday cocktail party.
POM Sorbet Spritzer
Ingredients:
To make POM Sorbet:
2 cups POM Wonderful 100% Pomegranate Blueberry Juice
1/2 cup granulated sugar
1/2 cup water
pinch of salt
To make Spritzer:
POM Sorbet
Champagne or sprite
Directions:
Combine water and sugar in saucepan over medium heat until sugar dissolves completely. Remove from heat and allow it to cool down in the refrigerator. Once chilled, add pomegranate juice and a pinch of salt. Pour the mixture into an ice cream maker and freeze according to the makers instructions.
To assemble the spritzer, place 1 scoop of sorbet into glass, fill remainder with champagne (or sprite).
