Cucumbers with cream cheese and pomegranate arils


I am a big fan of easy appetizers and this one falls right into that category. I love cream cheese - and I would eat it right out of the package if I could...okay so I occasionally sneak a bite when I am cooking ;) But I think that switching this up with a goat cheese would also be a nice variation as well.

Cucumbers with cream cheese and pomegranate
Ingredients:
½ cup pomegranate Seeds
1 (8oz) package of cream cheese – softened
1 clove garlic, finely minced
2 cucumbers, English, if available

Directions:
Slice cucumbers to bout 1/4 inch thick, set aside. In a small bowl stir together cream cheese and garlic until well combined and cream. Put cream cheese into a pastry bag or a ziplock bag with the corner snipped off. Pipe a dollop of the cream cheese mixture onto each cucumber slice. Top cucumbers with a few pomegranate seeds.

  1. I just wanted to tell you, Lorraine posted about your blog a while back on Facebook, so I checked it out, and I was impressed. BUT I wanted to let you know I absolutely loved the cucumbers. It's weird realizing so many people are into "homey" hobbies, like me. I have tried a few of your recipes and I just love them. Keep up the great work.
