Guacamole

With the Super Bowl right around the corner I wanted to share another quick crowd pleasing dip. This guacamole comes together really fast, requiring only about 15 minutes. I like to serve it with some tortilla chips along side some of my favorite salsa.

If you plan to make this dip a few hours ahead of time it’s best to cover it with plastic wrap, carefully pressing the plastic wrap against the guacamole to create a barrier – and I typically put the Tupperware lid right on top of that for extra anti-browning protection before I put it in the fridge.

Guacamole

Ingredients:

2 ripe avocados
1 tablespoon lime juice
¼ cup minced onion
1 large clove of minced garlic
½ jalapeño pepper, seeded and minced
¼ teaspoon chili powder

Pinch of cumin

 ½ teaspoon coarse salt

Pepper
¼ cup seeded and diced tomato

2 tablespoon cilantro, plus more for garnish

 

Directions:

Cut the avocados in half and remove the pit. Using a spoon, scoop the avocado from the skin into a medium bowl.  Mash the avocados together with the lime juice, onion, garlic, jalapeño, chili powder, cumin, salt and pepper until well combined (tasting to adjust the seasoning as needed). Stir in the tomato and cilantro

 

Garnish the guacamole with chopped fresh cilantro, serve immediately.
