Birthday Cake Frozen Yogurt

Two years ago yesterday I started this little blog! Happy Birthday to The Marvelous Misadventures of a Foodie :)

I have to admit, it doesn’t feel like its already been two years – but my blog has come a long way. My first post wasn’t anything spectacular, but I have grown as a writer and my confidence in the kitchen. There’s been a lot of change since the blogs inceptions two years ago – and I am really excited about all the upcoming changes that will be in store for the blog in the next few months. It’s amazing to see how much this has grown and changed along with me!

After I graduated from college with my bachelors degree I had a lot more free time on my hands and started to experiment a little more in the kitchen. One day I decided to sit down and start the blog – mostly as a way to keep track of recipes and as a way to share them with friends and family who would ask for them, but also as a way to write and express myself.

I had to throw in a couple of my graduation pictures – This one is a little awkward, but I was giving my speech, so it’s exciting none the less! And for those who are curious, my degree was a Bachelor of Arts in Sustainability through the School of Sustainability at Arizona State University.

The sad thing is, the part that held me back before that..was deciding on a name. Silly right? For some reason I thought it was so important to have it perfect before I started – but I realize now that its what you write not a fancy name that matters. Luckily the name seemed to stick and felt right – and over the years has grown into a brand that I can identify myself with. Who knew it would get to that?

While I only blogged off and on at the start of the blog (really for about the first year) - it has become something more constant in my life that I really have a passion for. Somewhere along the way it just clicked :)

I absolutely love blogging. I love writing/blogging about food and reading other peoples blogs about food. I’ve love the chance to connect with so many people in the blogging community – and have made some wonderful friends through it. I love my readers – although it’s just a small number, I love reading comments and sharing thoughts on food, running and life. I would blog even if no one read it, but it’s nice to know there’s people out there reading!

So I want to say thank you to all of my readers – you make blogging easy and fun. It’s great to be able to share my thoughts and recipes with you guys – I appreciate the time you spend reading, your comments, tweets and kind words. Thank you!

In celebration of this milestone I made some frozen yogurt – but not just any frozen yogurt, birthday cake frozen yogurt!

With just 3 ingredients, this recipe can’t get much easier. It has that slight tang of the yogurt, but with some sweetness from the cake mix – a surprisingly delicious combination. The texture is nice and creamy, and has a soft serve consistency. I had low-fat yogurt on hand – but you could sub it for regular or nonfat plain (or Greek!) yogurt. The key is to make sure its plain/unsweetened and you’re good to go.

Birthday Cake Frozen Yogurt

Ingredients:

3 cups low-fat plain yogurt

½ cup sugar

½ cup plus 2 tablespoon yellow cake mix

 

Directions:

In a medium bowl combine yogurt, sugar and cake mix, stirring together until well combined. Chill mixture in the refrigerator for 30 minutes.

Pour chilled mixture into the bowl of an ice cream maker and freeze according to the ice cream makers instructions.
