This is one of my go to dips. Its really easy to make and tastes better than anything you can buy from the store. When I am entertaining with lots of finger foods and dips, I like to put this dip into one of my small size crock pots to keep it warm. If you like a spicier dip you can leave the seeds in the jalapeno and/or use spicy refried beans.
Spicy Bean and Cheese Dip
Ingredients:
1 tbsp. olive oil
½ onion, chopped
1 jalapeno, seeded and minced
1 (14.5 oz) can refried beans (Rosarita Zesty Salsa or is my fav)
¼ tsp. ground cumin
½ tsp. kosher salt
¼ cup salsa
½ cup shredded pepper jack cheese
1/3 cup sour cream
Directions:
Heat the oil in a skillet over medium heat. Add the onions and jalapeno, and sauté until tender. Add the refried beans and cook until heated through. Stir in the cumin and salt until combined. Add sour cream, salsa and pepper jack, and stirring until cheese is melted.
