Mexican Rice

Has anyone seen Alice’s Bucket List? It is a blog written by a 15 year old girl with terminal cancer. She is so incredibly hopeful and inspirational. She wants everyone to become bone marrow donors – what an wonderful thing to add to the list. She so positive! I just wanted to pass this along since I found it so moving :)

Yesterday I saw a movie screening with a few of my girl friends. We saw Friends with Benefits which is supposed to be in theatres sometime in mid July. Here is the trailer:

I was a little skeptical of the movie since it had Justin Timberlake in it and looked like a re-make if No Strings Attached , but was actually really good! I highly recommend it. I particularly loved the flash mob scenes :)

This is the second part of the line with an hour still left of waiting..

I like going to see promo screenings like this cuz it’s a good chance to see the film before it comes out – and its free! But it also requires me to sit in a line for a few hours at a time. Nothing I can’t handle, especially when I just started a new book but for some people their time is more valuable than waiting for a free movie (not mine! ha!). I was fortunate enough to be in wonderful company and to have two of my friends there to wait with me (and we were really close to the front of the line!). We snuck in some sandwiches from Jimmy Johns and had a mini picnic in line and chatted about stuff as we facebooked/tweeted/emailed/browsed the internet on our phones.

We were having a grand ol time until a large group of adults came and cut us in line (I’m talking 10+ people). Well actually, they stood all around us divvying up their passes over our heads, then cut us. SO frustrating…we waited 3 hours to have you let all your friends in front of us..thanks..that’s really mature. I really shouldn’t be surprised, you should see the types of people that go to these things – they are so weird! By the way the act you can tell that they haven't paid for a movie in years and that these screenings are their life. Its so strange to me. I can handle like 1 of these a month and I only see the chick flicks :)

That’s enough ranting for now! On a much happier note, I am super excited for tomorrow night! I’m going to dinner with a few of my girl friends at Z Teja’s then going to see Les Misérables at ASU’s Gammage Auditorium. I’ve never seen Les Mis, but I have heard wonderful things so I am really excited! Here is a little video for the show:

Before I run off to go miniature golfing with my hubby for his work party, I have this yummy Mexican rice recipe for you!

We eat a lot of Mexican food in our house so I like to have some side dishes to go along with my main entrée, whether its enchiladas or fajitas – this rice is always a lovely compliment.

Rice is one of those things for me that can easily go awry, so I almost always cook rice in my rice cooker (not to mention that its one less pot on the stove to worry about!) With that being said, it sometimes hard to find flavorful rice recipes that are rice cooker friendly. With this recipe for Mexican rice I tried to get an authentic taste without all of the hassle. I adapted this from a few of the regular mex rice recipes I like and made it suitable for a rice cooker.

Rice Cooker Mexican Rice

Ingredients:
1 14.5 oz can diced tomatoes (Mexican style ones with green chilies work well here too)
1 medium white onion, peeled, trimmed and quartered
2 cups long grain white rice
3 cloves garlic, minced
2 medium jalapenos, ribbed, seeded and minced
2 cups low-sodium chicken broth
1 tbsp. tomato paste
2 tsp. salt
1/2 cup minced fresh cilantro (optional)
1 lime, cut into wedges for serving

 

Directions:
Rinse rice under cold running water. This works best if you place rice in a large fine mesh strainer until the water runs clear for a couple minutes. Pour cleaned rice into the rice cooker.

 

In the bowl of a food processor, pulse tomatoes and onions until smooth and thoroughly pureed, scraping down the bowl as needed.  Add in garlic, jalapenos, tomato paste and salt, pulse for a few more times until thoroughly combined. Transfer the mixture a liquid measuring cup; you should have about 2 cups.

 

Pour tomato puree mixture into the rice cooker, stir to combine. Add in chicken broth, cover with lid and cook rice according to the manufactures directions. *With my rice cooker I just click the lever down and it switches to “keep warm” automatically once rice it finished cooking*

 

When rice has finished cooking, fluff with a fork and stir in cilantro. Serve with lime wedges if desired.
