The idea for these delicious fruit cups came from a trip a took to New Mexico with my friend Lorraine – we took a road trip to the Whole Enchilada Fiesta to see them make the worlds largest enchilada. As I am sure you can imagine, there was tons of good food to eat. We saw lots of people walking around eating cut up fruit out of cups. As soon as we tracked down the booth that sold them, we got a cup to split. I was hesitant at first to eat fruit covered in chili powder, but I am so glad I did – the flavor combination is wonderful! Here is my re-creation of that New Mexico snack:
Mexican Fruit Cups
Ingredients:
3 mango
1 cantaloupe
1 small seedless watermelon
1 pineapple
4 limes, divided
Chili powder for sprinkling
8 cups
Directions:
Cut mango, cantaloupe, watermelon and pineapple into thick strips. Arrange an even mixture of various fruits strips into each cup. Cut the limes into quarters and squeeze 1 lime wedge over each up of fruit. Use the remaining 8 wedges for garnish and sprinkle chili powder over each cup to taste.
