Did everyone have a good Labor Day weekend? We definitely did! Lance and I got a big group of our friends together to go camping and boating at Roosevelt Lake. We brought an RV so it was only half camping, but it was still a ton of fun!
It was also my first time towing our boat with my truck. Which was a fun (and successful!) experience. Two of my friends made the drive with me and we had a blast ;)

Saw a giant tarantula – at night..in our walking path!
Hung out by the fire
And of course ate lots of good food
Knowing that I was going to be feeding 8-10 people I knew I needed to be organized :) So I decided to sit down and make a menu for the weekend. From that I made a grocery list and a packing list. Then printed out any recipes I would need while I was there. I planned food that could be somewhat prepped before I left and would be easy to assemble there. A few of our friends kept saying that the food was too good to be camping food.. I’ll take that as a compliment! Here was my menu:
Day One:
· Breakfast – pancakes (the Bisquick shake and pour kind) and sausage
· Drinks: Mock Sangria
· Dessert – s’mores!
Day Two:
· Breakfast – Camping Frittatas
Snacks: Ranch pretzels, Chex Mix, Taco Chex Mix, and Muddy Buddies
