So far this summer it hasn't been too hot - and by too hot I mean its been hovering around about 100 degrees. Those kinds of days I can handle, but when it gets to about 110, like it has this whole week - I start to complain (especially if I'm in or around the water). We have been working on our new house, which doesn't have AC yet, so that may be part of the reason it has felt so miserable to me this week.
But enough about the weather, let’s talk about these yummy popsicles that can be enjoyed anywhere, not just here in AZ where it’s blistering hot! So why pineapple? Well, my grocery store had some wonderful looking pineapple on sale for 99 cents! So I couldn't resist, I had to get one. So there it sat and I wondered what I could possibly do with it since I bought it without any intentions. And that is where the popsicles come in. A perfect way to beat the heat and use my pineapple!
Pineapple Popsicles
Ingredients
½ pineapple, peeled and cored (about 2 cups)
2 tablespoons sugar
½ cup water
Directions
Cut the pineapple into chunks and puree in a blender or food processor with sugar and water until smooth. Taste and add up to 2 tablespoons more sugar, if desired. Pour mixture into popsicle molds, add sticks, and freeze until firm.
