Cheesecake with Raspberries and Chocolate Glaze


This is my moms cheesecake recipe. Its a family favorite so she makes it frequently for holidays and birthdays. This is my first attempt making it and it actually came out quite tasty!


Ingredients:

Cheesecake

1 chocolate graham cracker pie crust

Two 3-ounce packages softened cream cheese

One 14-ounce can sweetened condensed milk

1 egg

1 Tablespoon lemon juice

1 teaspoon vanilla

1 cup fresh or frozen raspberries


Chocolate Glaze

¼ cup heavy whipping cream

Two 1-ounce squares semi-sweet baking chocolate


Directions:

1. Preheat oven to 350°. In a medium size bowl beat cream cheese until fluffy. Gradually beat in milk until smooth. Add egg, lemon juice and vanilla, mix until well blended.

2. Cover bottom of the pie crust with raspberries. Slowly pour cheesecake mixture over raspberries.

3. Bake for 30-35 minutes or until center is almost set. Cool completely.


To make chocolate glaze:

1. In a small saucepan, heat chocolate squares and heavy whipping cream over low heat. Continue stirring until thick and smooth.

2. Pour chocolate glaze over cheesecake. Store covered in the refrigerator.
