Fried Rice

I’m blogging to you from the road today! We are currently in route to California for the Tinker Bell Half Marathon – I’ve been counting down the days for this trip for a while now and I’m really excited :) There just a few miles left between me and my destination.

At one of our gas station stops there was crazy selection of taffy – we of course had to get some for the road! While Chelle and I were in line we were asked by the man behind us if we were sisters. After saying no, he proceeded to tell us that we have the same skin..? it was a little strange but we left cracking up about it.

The plans for the weekend are as follows:

Friday – DISNEYLAND!!

Saturday – Race Expo, relax, eat/hydrate, and maybe see One For The Money

Sunday – Race Day!!

Naturally I’m pumped to get the fun started :)

Before the AZ Rock N’ Roll Relay I put together a fun little 90’s playlist. I absolutely loved running to it – it was so refreshing to listen to upbeat music, that I didn’t hear on the radio every day. While I love LMFAO, Jay Sean, Ke$ha, Jason Derulo…etc., I literally tune most of it out half the time when I’m running since I hear those songs so often. So I decided to add a few more songs to it and turn it into a half marathon playlist!

Here is a little screen shot of some of the songs I’ve got on my list – but I also made it available on itunes, so that you can listen to clips of the songs and download some (or all!) of them if you choose to do so.

The whole playlist has 42 songs and lasts about 2 hours and 40 minutes – so it’s pretty perfect for the half marathon distance. You can view the whole list and check out the downloads here.

Each year as a part of my Chinese New Year dinner party I serve this fried rice – and how could I not? Everyone loves it! I have a few secrets to delicious homemade fried rice. The first is to use day old rice, I know this sounds weird, but it works so perfectly for this. The second is to use Tamari. It is basically an amped up version of soy sauce, it’s aged dark soy sauce with twice as much flavor as the regular one. I typically only use it when I am cooking and use regular low sodium soy sauce for dipping and whatnot. Try it – I guarantee you wont be disappointed! I like the color that the red bell pepper adds to the rice, but feel free to add whatever veggies you’d like – sometimes I throw in bamboo shoots, water chestnuts or bean sprouts for extra crunch.

The next time you have some extra rice in the fridge, make a batch of this fried rice to serve along side your favorite Chinese food dish.

Fried Rice

Ingredients:

2 cups cooked white rice

2 tablespoons peanut oil

2 eggs, beaten

2 cloves garlic, chopped

2 tsp fresh grated ginger

1 small red bell pepper, diced

2 scallions, thinly sliced

1 cup frozen peas and carrots

1/3 cup Tamari soy sauce

 

Directions:

In a large skillet or wok, heat oil over medium high heat. Add beaten eggs to the skillet and scramble until egg is cooked in small bits. Stir in ginger, garlic, scallions and red bell pepper and fry until tender, about 2 minutes. Add in rice and stir fry for 3 to 4 more minutes. Pour the soy sauce and frozen peas/carrots in, stirring until well combined and vegetables are warmed, about 2 minutes.
