Playlists full of Christmas music are blaring throughout the house - but mostly in the kitchen…
And I made a playlist for all of you to join in on the fun (through Playlist.com): A Very Marvelous Christmas Playlist! And yes, that is Hanson you hear :) I figured some throwback bands were necessary to get you through the holidays, plus a few of my all-time fav’s like Michael Bublé and Frank Sinatra! I think the whole playlist is a keeper.

I have killed a countless number of cookies in my kitchen by using all kinds of crazy spatulas (and other tools…) and now that I have used a legitimate cookie spatula, I am hooked! And I want to share one with you guys:

Soft and Chewy Gingersnap Cookies
Ingredients:
2 1/4 cups flour
1 tsp. baking powder
1/4 tsp. salt
1 tsp. ground ginger
1 tsp. cinnamon
1/2 tsp. ground cloves
Pinch of fresh nutmeg
3/4 cup unsalted butter, at room temperature
1 cup packed light brown sugar
1 egg
1 tsp. vanilla
1/4 cup molasses
White sugar-to roll the cookie dough in
Directions:
Preheat the oven to 375 degrees.
Combine the flour, baking powder, salt, and spices in a medium bowl. Whisk the ingredients together.
With a mixer, combine the butter and brown sugar until smooth and creamy, about 3 minutes. Add in the egg and vanilla extract and molasses, mix until well combined. With the mixer on low, slowly add the flour mixture. Add in a little at a time until all of the flour is mixed in.
Form the dough into Tablespoon sized balls. Roll the dough in white sugar. Place the cookie dough balls two inches apart on a large parchment lined baking sheet, pressing down slightly on each cookie.
Bake for 8 minutes.

ReplyDeleteMy holiday tradition sure has changed over the years. My new tradition (well it will be when I do it for year 2 this year) is to hang out on the couch all day with a blanket, enjoying a book and some movies. Of course while drinking a few adult beverages and losing my front door...
That looks like a fun little gadget. I want to bake now!
ReplyDeleteMy favorite holiday tradition is watching Christmas movies with the tree lights on and drinking hot chocolate or mulled wine. Ah, perfect!
My favorite holiday tradition was always when we got to pick one present on Christmas Eve to open and then spending all day Christmas Day making all of our dinner items from scratch! Now that I have a daughter, we'll get to start a new tradition for her to carry on! =)
ReplyDeleteI made ginger cookies today too! My favorite holiday tradition is going and looking at Christmas lights! There is this amazing house near Arcardia that is absolutely unreal--if you've never been, you should come with us this year! :O)
