Pumpkin Pie French Toast

Last weekend Lance and I went to Schnepf Farms with a few of our friends for their annual Pumpkin and Chili Festival. I love fun fall related activities and it’s been a few years since the last time we had gone. I think I was mostly looking forward to the chili and the corn maze ;)

Crystal and I made Lance and Chelle pedal us around a little track in a 4 person cart that was obviously made for children (or perfect families of 4). They were both exhausted after..hehe

We rode some more rides intended for children…like this ladybug swing (which was actually quite fun)

We had some chili (veggie for me!) along with some scrumptious corn on the cob, cornbread and brownies! Unfortunately for my dear friends I tried about 100 times to take a photo of my plate – but due to the very low lighting this was the best I got :)

Then we went on a little hay ride around the farm

Which took us to the corn maze!! Schnepf Farms has by far the best corn mazes I have ever done (not that I’ve done a lot). The four of us somehow managed to get lost in this thing for about 30 minutes! It was lots of fun.

On our way to stop and get kettle corn for Chelle before heading home we noticed a fire pit set up with marshmallows for roasting. Crystal and I stopped and made ourselves a few :)

They got Chelle on the upsell and she ended up taking home a ginormous bag of kettle corn – but it was super fresh, they made it right there then scooped it into her bag!

I am dying to get to a pumpkin patch so I can get my hands on a pumpkin to carve! It’s one of my favorite things to do for Halloween :)

Today I bring to you the amazingness that is pumpkin pie French toast. a few weekends ago I woke up early on a Sunday morning and couldn’t get back to sleep, so I decided to get up and make some French toast for Lance and I for breakfast. Then it dawned on me that making French toast with pumpkin would be about 100x better! I sweetened the deal a little by throwing in some pumpkin pie spice too :)

Pumpkin Pie French Toast

Ingredients:       

Cooking spray

3/4 cup pumpkin puree

3 large eggs

¾ cup milk

½ tsp vanilla

2 tablespoons brown sugar

1 ½  tsp pumpkin pie spice

Pinch of salt

8-10 slices of bread

Syrup and powdered sugar for serving

 

Directions:

Lightly spray a griddle or skillet with cooking spray. Heat griddle to 375° or heat par over medium heat.

 

In a medium bowl combine pumpkin puree, eggs, milk, vanilla, brown sugar, pumpkin pie spice and salt. Stir together until well mixed, then pour contents into a shallow bowl.

 

Dip bread pieces into egg mixture, one at a time, and place onto griddle. Cook for 3-4 minutes on each side or until golden brown. Repeat with remaining slices. Serve warm with syrup and/or powdered sugar.
