Mint Oreo Stuffed Brownies

Finally a recipe! I think its been a month since have posted an actual recipe – and man do I have a bunch of recipes to post :) I’ve got a stockpile waiting to get put on the blog..I’d better get to some of them soon before we run out of summer (or at least for those of you who are not stuck in the sweltering Phoenix heat…we’ve still got another full month of hot). Things like grilling, peaches and ice cream just aren't the same when it’s not summer, but if you ask Lance he’ll tell you he would much rather grill in the winter than in the summer ;)

And some good news! I got my camera back from cannon! Woo-hoo! They were actually unable to fix it but sent me a refurbished one instead :) I am just happy to have it back!

Did anyone watch Top Chef Just Desserts last night??! I have been so excited for this! To be honest I was actually a little afraid that they wouldn’t have a second season because it didn’t seem like anyone but me even watched season one. But nope – Bravo came through for me :)

I think there are some interesting personalities and some serious talent in the group for season two – I think its going to shape up to quite an interesting season. I don’t have a favorite for the season (yet!) but I was rooting for Amanda and Nelson for the quickfire challenge and was happy when they won – I thought theirs was the most creative. I cant wait to see what's in store for next week :)

If you are a Top Chef fan at all or just like to watch shows related to food (<—definitely me!) I urge you to check it out next week!

Although I hate the thought of turning on my oven around here in the summer..sometimes a girl just needs brownies. Or Mint Oreo Stuffed Brownies to be exact!

I am always shocked to hear how many people make brownies from a boxed mix – homemade brownies from scratch are sooo easy (and freakin delicious!) plus I always have everything on hand to make them. My recipe doesn’t take any fancy Dutch processed cocoa powder or unsweetened chocolate bars or anything else crazy – it’s the just the basics! They are so easy to spruce up too – you can mix in some chocolate chops or throw in a bunch of Oreos :) So the moral of this story is…If you are still making brownies from one of those mystery ingredient boxes, stop right now! And make your own – You won’t be sorry!

So enough ranting and on to the recipe!

Mint Oreo Stuffed Brownies

Ingredients:

1 ½ sticks (3/4 cup) unsalted butter

1 ½ cups white sugar

3 eggs

1 teaspoon vanilla extract

½ cup unsweetened cocoa powder

1 cup all-purpose flour

½ teaspoon baking powder

1/4 teaspoon salt

16 mint Oreos

 

 

Directions:

Preheat oven to 350 F°. Grease an 8 inch square pan.

 

In a large saucepan, melt the butter over medium heat. Remove from heat, and stir in vanilla, eggs and sugar until thoroughly combined.  Mix in cocoa powder, flour, baking powder and salt until well blended.

 

Pour two thirds of the batter into the prepared pan. Layer Oreos side by side over the top of the brownie batter until completely covered. Pour remaining batter over the Oreos, spreading with a spatula if necessary.

 

Bake at 350 for 35-40 minutes. Let cool completely before slicing and serving.
