POM Summer Berry Sangria

I’m counting down the days until my first half marathon – only 5 days to go!

On Friday I did my last long run before my race. I ended up running 13.53 miles and ran it in record time. My pace didn’t feel super fast, but when I stopped my running app my time blew me away! I think it may have been a little off on the time – but I am hoping that I can run that well when I do my actual race on Saturday. My goal is to finish in 2 hrs and 45 min. Why that magical number? Well I signed up for the Tinkerbell half marathon at Disneyland and if you think you can finish in less than 2 hours and 45 minutes you have to show proof – so my upcoming half will be my proof!

Since its been so ridiculously hot here I have been getting up around 4ish to do my long runs. I leave my house when its still dark out (no joke!). Luckily the canal path that I run along has lights – solar lights to be exact!

Chandler has also recently added a few crosswalks with stoplights at some of the canal crossings – I am SO excited about this! Now I can wait for a light instead of having to dodge traffic. I love it!

Lance and I are leaving on Thursday after work to head to Utah for my race. We are spending the first night in Kanab, Utah. Then heading up to Bryce Canyon, where the marathon will take place, on Friday morning. I am really excited to get to see Bryce Canyon, it’s been on my list of places to see for a while. Now I’ll just have to get through the rest of the work week – It’s only Monday and I already wish it was the weekend!

A couple months ago I won a bottle of pomegranate juice concentrate from the folks at POM from their Facebook page. As some of you may already be aware, I am addicted to pomegranate juice (one of my favorite things to drink after a long run!) so I was very excited to get to try some of their POM concentrate. It’s so incredibly convenient to use in the kitchen. I use it for cooking, baking, smoothies and for drinks – like this refreshing summery sangria!

I happen to love sangria. Its one of those beverages that’s perfect for summer nights that you’re just hanging out on the patio or by the pool, but it can also be fancy enough for company. For my sangria I used a strawberry, blueberry and blackberry mixture and garnished the cups with a strawberry – but feel free to use whatever you have on hand. This is definitely a strong sangria so just reduce the amount of rum if you are concerned about the alcohol content. This makes a huge batch (which is great for entertaining) but can be easily cut in half if you aren't serving a large crowd.

POM Summer Berry Sangria

Ingredients:

3 cups mixed berries

1 cup sugar

3 cups spiced rum

1 ½ cups orange juice

4 Tbsp pomegranate juice concentrate (or 1 ½ cups pomegranate juice)

2 bottles (750 ml each) merlot (or any dry red wine of your choice)

 

Directions:

In a large pitcher combine berries, sugar and rum. Stir to combine, slightly crushing some of the berries. Refrigerate for 2 hours to let flavors meld.

 

Once mixture has chilled for two hours add juices and wine. Best served chilled.
