Cantaloupe Margaritas

Happy first day of summer! I wish I was on a tropical beach right now…

Did everyone have a lovely Fathers Day weekend? We had a fun filled weekend! We spent Sunday morning at the lake then headed to my father in laws for a BBQ. I brought a yummy homemade sweet cherry pie (Lance’s dads favorite pie), we ate lots of delicious food, then had a water balloon toss that of course ended in a water balloon fight. It was lots of fun – I haven’t played with water balloons in years :)

Today I bring you a summertime staple – fresh fruit margaritas! This recipe will work wonderful with any kind of melon or just about any fruit (think watermelon, strawberries, mango…yum!). The frozen limeade concentrate seems a little weird but it is the perfect addition – it adds a little sweet while also adding the lime. It is a necessary ingredient for all of my margaritas now. I just put the remainder of the can into a freezable tupperware container so its ready to go for the next time we make margaritas.

We have a really crappy blender – it is awful at crushing ice. So I use the ice dispenser on our fridge to do some of the work for me, so I am starting with partially crushed ice. If you have an excellent blender (or at least one that can chop ice) or don’t have/want to used crushed, then whole ice cubes will work here too! I would recommend using fresh fruit  so that it has a stronger flavor but frozen can work too. I like to cut up my fruit in advance and chill it in the freezer until I’m ready to make the margaritas. I find that this helps them stay cold longer. I also like to chill my glasses in the freezer for an extra chilly touch (great for summer!)

Cantaloupe Margaritas

Ingredients:

Crushed ice (about 2 cups)

1 cup chilled or frozen cantaloupe

6 oz tequila

¼ cup frozen limeade concentrate

2 oz Grand Marnier or triple sec

Lime wedges for serving

 

Directions:

Fill a blender with crushed ice and melon. Pour in tequila, limeade concentrate and Grand Marnier and blend until ice is completely crushed and mixture is smooth. Serve in chilled glasses and garnish with lime wedges.
